(NSFW) What do butchers do with the heads of the animals that they harvest?

Must be thousands of cow , pig , chicken and fish heads being used for god knows what? Like a throne of skulls? Or ground for weight gain powder?

Make sausage out of the meat and grind the skulls to make their bread.

at least that is what the giant butchers do.

mcdonalds hamburgers. they use the eyeballs, too

Haven’t you ever heard of Head Cheese? Delicious.

Both Anthony Boudain and (especially) Andrew Zimmern have done segments on their respective programs featuring restaurants and individuals using the lesser known parts of pigs, cows, even fish.

There was one place where they did Goats Head Stew and it was praised as being really delicious.

And most of Bourdain’s features on fish in various cultures normally show an entire fish being served, head included, with the eyeball being presented to the guest as a special delicacy.

And there are numerous current chefs who are strong proponents of “nose to tail” cuisine.

Fergus Henderson in England is one and in Calif. there is Chris Cosentino.

As a matter of fact, most nationalities and cultures are far less squeamish about eating ALL of the animal than we spoiled folks in North America.

Head cheese was my first thought. We used to fry and eat smoked hog jowl like strong bacon. I’ve heard of people scrambling brains and eating brain sandwiches (sliced, breaded and fried). Tongue is delicious. Did you know that Underwood started out as “Underwood Deviled Ham and Tongue”?

Mad cow disease came from the practice of feeding unused animal parts back to the animals. (There was a great “X-Files episode about feeding chickens with chickens.)

Ever since I first saw this thread this afternoon, I have been thinking of the Christmas dinner in Angela’s Ashes by Frank McCourt, when he brought home a pig face for the family feast.
