Can you fill my plate with colorful things?

This is based on the interest and answers I received on my other Q about orange colored foods.

I would all like you to prepare a (vegetarian) plate for me using at least one food item from each of the following colors: red, green, orange, white, yellow, brown and purple. I’ve sort of determined that most of the other colors tend not to have any foods, at least not foods found in nature, associated with them. Even blueberries are actually purple. However, if you happen to find a food found in nature that happens to be a color that I have not mentioned, feel free to add it onto my plate for extra credit. And yes, I know Snowballs are pink, but they’re only pink because of the food dye, which we are trying to avoid. And don’t forget to fill my plate with only vegetarian fare.

This is a bit of a game, a bit of an eye opener for all of us, and a challenge to everybody. Are you game?

I’m guessing this will be kind of like the TV show Chopped, where it doesn’t matter whether the foods you pick actually taste good together as long as you get all the colors on the plate, but you will get extra brownie points for finding stuff that actually pairs well together.

Beets alone will cover many of your suggestions, not to mention the red and white striped ones.

Here’s my own picks.

Red: Vegan Meatball Sandwich

Green: Palak Paneer

Orange: Toast with Marmalade

White: Pickled Daikon Radish

Yellow: Yellow Tomato Salsa

Brown: Chocolate Covered Almonds

Purple: Berry Cobbler

@jaytkay That’s an excellent choice, but don’t forget, the challenge is to fill my plate with an item from each one of the colors listed : )

@gailcalled You’re right, you can probably fill the whole plate with multi-colored beets. Extra credit for you.

I love to make Pickled Red (they’re actually purple, as you know) Onions with Lime Juice

Imagine 3 shish kebobs with cubed or thick cut veggies on top of a bed of brown rice.
Red pepper, Yellow squash, Green pepper, white onion, orange carrots, purple nasu eggplant.

@ucme That looks delicious! I’m surprised I’ve never heard of it, nor did I see one when I visited England. Now I’m craving it.

@Mimishu1995 I’m pretty sure the chicken isn’t suitable for vegetarians either, that aside from the fish sauce.

@Kardamom oh, I forgot about the chicken…

But there are more than one way to make it. You can replace the chicken with something else like cabbages.

Dinner 1

purple, orange, yellow- grilled corn and cabbage slaw

green, homemade guacamole

brown, fried plantains

red, white, flan with strawberries

Dinner 2

red, green, white- caprese salad

purple, green, red, yellow, ratatouille

brown, grilled portobello mushrooms

orange, white, grilled peaches with vanilla ice cream.

Colorful and vegetarian is starting to seem like a great way to eat healthy.
