How do you prepare and eat kale?

Asked by LuckyGuy (43880points) May 23rd, 2015

I bought a large bunch of it for $2.00. Without any research to influence me I’ve been trying different preparation and cooking methods. In all cases, I cut off the stems and eat the leaves. I did try eating the stem raw once but it was not very good.
I roasted some in a frying pan with a little olive oil That was good but, the leaves disappeared.
I poured water and oil in a frying pan and cooked it. The leaves turned bright green and were tender. I liked the texture but not the taste.
Today, I cooked some in the frying pan with water, olive oil, and a sprinkle of Zatarain’s Creole seasoning. I used the kale and some cheese as a filling in a 3 egg omelet (prepared with only one yoke.)
It was delicious!
How do you eat kale, raw or cooked? Do you eat the stems? Do you have any other serving suggestions?.

I don’t eat kale (can’t, due to dietary restrictions), but I know lots of people who use it primarily in smoothies.

One idea from today’s paper.

I will follow this to get ideas; I usually prepare kale by getting it ready to eat from the deli section or in a salad at a restaurant.

Well, I don’t. Kale is my grandson. I mostly feed him.

This recipe is similar to the Southern style of cooking greens. Instead of or in addition to a splash of vinegar, I would think about adding a splash of hot sauce.

I drink it.
I’ll blend it with spinach or romaine lettuce, berries, and orange juice.

I don’t, Kale is nasty. haha
We grew some here at the ranch last summer and dried it into chips, salted it and it tasted like seaweed. Even the geese and ducks won’t eat it and that is saying a lot. lol
The best way to use Kale is to chop it up and put it in a soup so that it;s nastiness is highly disguised. It is not too bad in a 15 bean soup or other veggie soup concoction, but plain Kale sucks.

I drink it, too.

Most mornings I make a smoothie with
orange juice
banana
blueberries
kale (or spinach)
yogurt

I cram as much greenery in as I can fit and it doesn’t effect the taste.

It takes 2 minutes preparation, and I get a boatload of fruit and veggies.

Tear the kale from the stems in bite sized chunks. Toss with some olive oil, then salt. Bake in a moderate oven, flipping every 4 minutes until crisp. Toss the kale in the garbage, order a pizza.

These answers are great! I can see that there will never be a run on the kale market – unless someone discovers a viagra-like compound. hidden in the stems.

I cooked some again but this time I added a packet of soy sauce and a packet of wasabi left over from a sushi order.
That gave it an interesting Oriental flavor. I’ll try it again in an omelet

For me, kale is, was, and always will be a plate garnish from the 1970’s-80’s.
With a cinnamon apple ring and orange slice.

We never ate it, but it took up room on the plate and looked nice.

I love kale. My favorite way to eat it is raw in salads, but you need to know that you can’t just eat it raw right from the ground or store, it will be too tough. What you need to do first, after you’ve stripped the leaves from the stalks (you won’t want to eat the stalks) chop up the leaves and then add a tiny bit of olive oil and a tiny bit of sea salt or Kosher salt (½ teaspoon of each for a good bunch of kale) then put it in a big bowl and “massage” it into the leaves with your clean hands, or wear disposable plastic gloves if you don’t want to get them oily. Here is a Demonstration. Let that sit for about 20 minutes, then you can proceed with any of the raw salad recipes.

I just made this recipe for Raw Kale Salad with Tahini and Maple Dressing last week, minus the Brussels sprouts because I didn’t have any. It was really good. I’d make it again in a heart beat.

This recipe for Raw Kale Salad with Root Vegetables is one one of the regular recipes in my rotation. I’ve been making it for several years now. I like the combo of rutabaga, carrot and turnip, and I’ve also made it with jicama, daikon and golden beets. You can use any combo of root veggies that you like. Instead of going to the trouble to make the nuts myself, I just use these Spicy Pecans.

This next one, which I just found but haven’t yet tried, sounds really good too. It’s Thai Kale Salad with Coconut and Lime Dressing

Kale is really good in Borscht

I also like kale in Quiche

I also like Baked Kale Chips with Parmesan

I prefer the firmer texture of kale to spinach. This Kale and Ricotta Stuffed Shells with Butternut Squash Sauce sounds right up my alley. You can also use regular marinara sauce if you want.

Kale is really good on Pizza

And kale pairs really nicely with white beans in Soup (this one also has sausage).

This next recipe is on my “to try” list. You can use kale instead of cabbage for stuffed Rolls. These ones are stuffed with quinoa, walnuts and goat cheese.

@Kardamom Wow! I wish I could give you more than 1GA!
It appear that my intuition was on the right track: strip off the leaves, add a little olive oil and some seasoning and then eat it raw on salad or cooked a bit and add to something else.
I will try some of the items on your list.
Thank you!

@LuckyGuy Let me know how it goes. I think you will end up liking kale more than you thought you would, and it’s a nutrition Powerhouse.
