Why doesn't human fat melt?

Every year you see heavy people baking in the sun at beaches. So why doesn’t the sun melt fat?
If you left a tub of fat in the heat but under shade, you will find it all melted when you open it up.
So why doesn’t our body fat melt? We lose water but not fat. Our skin can burn and dry up, but fat remains. So why won’t fat melt?

I’m just guessing. I assume the fat in our bodies needs to be heated above 105ish degrees. When we sit in the sun we still maintain a 98.6ish temperature unless we are experiencing heat stroke. Above 105 fever we risk our health in more than one way.
There are different types of fat that have different melting points. Think of a piece of steak, when you cook it some if the fat melts off while some stays on the steak and that is cooked at well over 120 degrees. In the oven or over fire it is likely to be at around 400 to 450 degrees. In a pan it still is quite a high temperature.
As @JLeslie says, when alive, animals have a natural body temperature regulator.
And if you put a roast in the sun, the fat might sweat a bit, but it certainly wouldn’t melt.
“Oh that this too, too solid flesh would melt” – that’s all I’ve got on the subject.
The melting point of human fat varies according to its location in the body, but even the highest melting point is lower than body temperature. So technically, it’s always in at least a semi-liquid state just from the heat of your own metabolism.
But the liquid fat is contained within cellular walls which aren’t composed of fat, but of cytoplasm. The liquid fat is only free to run off when heat breaks down the cytoplasm containing it. But since the cell walls of all your tissue are cytoplasm, whatever heat would break down the cell walls of your fat would also damage your non-fat cells.
Well, the beaches would look like a bad BP commercial, so they came up with a polymer that mimics fat but doesn’t melt.
Wish it would, I would BBQ my butt and boobs away!
