Can you give me your best recipe for Artisinal Handcrafted Spam?

You inadvertently make a good point.

If spam were remotely sophisticated, telling a story, subtly sucking you in to make the pitch, then it might be worthwhile or at least more acceptable.

The problem with so much spam on this site is that it is poorly done. No class, no originality, just some bullshit words and a URL. And half the time, no punctuation because the spammer isn’t a native english speaker and is only doing copy/paste.

So…

To all the spammers out there – if you spent more time on quality and less time on quantity, people might not hate you quite as much.

Home Made “SPAM®”:

2 pounds pork shoulder
8 ounces ham, roughly chopped (I used uncured ham, European-style)
2 cloves garlic, roughly chopped
1 Tablespoon sea salt
1 Tablespoon sugar
¼ cup potato starch

Preheat oven to 300°F

Cube pork into 2-inch chunks. Leave in freezer for about 20 minutes to firm it up for grinder
Grind pork, using meat grinder
Mince ham and garlic in food processor. Add mixture to pork
Add salt, sugar, and potato starch. Mix thoroughly with hands
Pack one (of 2) 9×5x3 loaf pan with pork mixture. Cover with foil.
Center loaf pan in water bath in oven
Bake for 3 hours, to internal temp of at least 155°F

Discard accumulated fat (presumably, this is the undesirable element mentioned in the OP)
cover with foil again. Nest the other (empty) loaf pan on top of loaf. Place about 6 lb weight in the pan

Refrigerate overnight with weights.
Unwrap and store refrigerated in air-tight bag or container for up to 3 or 4 days

It can also be frozen in airtight freezer bag for up to 2 months
thaw overnight in refrigerator before using.

^^ That recipe sounds delicious. Would Prosciutto work as well as the European-style ham should the latter not be available?

It might taste a little different, but I don’t think it would be incompatible.
