What kinds of delicious summer foods have you guys been making/eating lately?

I have been exploring the world of leafy greens. I’ve eaten more kale this summer than I’ve ever eaten in my entire life, and I mean that in a good way. I’ve also been trying out new vegetables that up until this summer, I had never had before, with some really good results.

I’ve made this Kale Salad minus the cheese (to keep it a little lower in calories) about 6 times! This week, I altered this recipe and used Swiss chard in place of the kale, and used peanut butter instead of the tahini. Yum yum!

I also tried a variation on this Kohlrabi Salad that was mighty tasty.

Last night, I picked up some fresh falafel balls from one of our local Middle Eastern restaurant/bakeries, then I wrapped them in Swiss chard leaves instead of pita bread, with a schmear of hummus. That was so good!

I’ve also taken to putting fresh greens on top of frozen pizza as soon as it comes out of the oven. It gives the pizza an extra nutrient boost, as well as giving it a nice and different flavor/texture profile. Salad pizza, if you will.

I’ve also been experimenting with cold drinks. I had some coconut water and some Izzy Grapefruit Sparkling Water (just fruit juice and sparkling water). That was very tasty and refreshing. I also mixed some mango juice with green tea. Another winner.

Tomato and Swiss cheese sandwiches, with Miracle Whip with some lemon juice in it. So good!

Rick and I grilled some trout the other day. Spritzed it with orange and lemon juice. Yummy!

I’ve had some amazing sweet corn this year, my tomatoes are coming on like crazy, and I may be enjoying some bunny rabbit if he keeps eating any other plants.

Wow what a coincidence! I recently started on morning smoothies blending kale, other leafy greens, fruits, chia seeds, carrots and quinoa…and even raw oatmeal ( not sure if that’s a good thing to do raw oatmeal )…..simply because it’s suppose to be healthy and truth is it’s quite convenient since I’m more lazy now preparing any kind of breakfast, healthy or not….LOL

My s/o picked some of the ripe tomatoes last night because we may get some storms today. They’re super sweet 100’s and they’re very thin skinned and tend to split after a heavy rain. She tried one and said you have to try this. It’s just like candy. And holy crap, it was. Amazing.

I’ve really been enjoying a summer “beer-cocktail.” It’s a Stiegl Radler (grapefruit) with a shot of gin.

Stiegl Radler’s are already good summer drinks (beer + grapefruit soda), they come in the tall 16oz cans, but they are really low alcohol content, adding the shot of gin kills some of the sweetness and gets it to a typical beer abv.
