For Juicers: Can soy milk be substituted with water?

We went on vacation and there was a juice bar. My husband fell in love with the juice bar and he finally convinced me to buy a juicer. Well, I am looking for recipes and it seems that almost all the ones he would like have soy milk or almond milk in the recipe.
Is it necessary? Can they just be substituted with water?
I would appreciate any recipes anyone has that is a hit with your family.
Fruit or vegetable, or a combo would be appreciated.
Especially anything that you know can actually camouflage the taste of Kale.

The soy and almond milk is for protein. Most juicers already have a recipe book in the box.

I do not see any issue at all with adding water. I personally like adding real coconut milk in my smoothies for more body and creaminess. I have a Ninja bullet style blender that does what a juicer does but leaves all the fiber in the smoothie.

My recipes are usually what is in the fridge. For breakfast I will freeze a half a banana and the other fruits the night before. To my fruit smoothies I will add a tsp of a vegetable based protein powder for extra amino acids, ½ tsp of Chia seeds, ¼ tsp cinnamon, and I a tsp of psyllium powder for an additional fiber boost. I will add water if it is coming out on the thick side. You can also balance out the sweetness by mixing in less ripe fruits with the riper sweeter fruits. I don’t think kale is all that offensive and will add that in the my fruit smoothies but if makes it look yucky but won’t kill the flavor of the fruits.

For veggie juice/smoothies again it is anything goes. I haven’t yet found a way to offset the bitterness of raw spinach and broccoli but am still experimenting. It may just be adding less of the more bitter raw veggies. Sweet red pepper is great for adding flavor but just a smallis slice is more than enough to add a nice flavor to the mix.

For veggie mixes I don’t freeze the veggies and will use crushed ice. if I have it I like to add a couple tablespoons of that coconut milk, a chunk of pineapple and or a slice of pear to sweeten things up. Again a tsp of veg based protein powder and tsp Chia seeds. I also like to flavor things up with some fresh herbs and lemon. Fresh Rosemary, a squeeze of lemon juice or fresh lemon mint leaves are my fav.

@Tropical_Willie True, but I lots of times those things are more about health and not necessarily taste. Like when I bought my new food processor last year. It had a recipe book. So many of the things where things I would never eat or even want to eat because it was either going to be extremely bland or had a list of things I would never eat.
I do plan on actually buying a book for it but it too may not have really great stuff in it.
So I figure some people can give me some ideas of things they tried that tasted really good.

@Pandora I hate Kale too, haha, try juicing cabbage wedges mixed with carrot juice, cabbage is just as good as Kale and tastes way better.

Just a warning about frozen fruit in the machine: I broke the blades on a brand new good quality blender once by putting frozen strawberries in and trying to blend. When I called Customer Service to get replacement blades, the guy told me that frozen strawberries are harder than ice. The frozen strawberries can or will break the blades. Of course, they sent me replacement blades but it was a lesson.

@Coloma, Actually kale in the juicer is quite good. I mix it with spinach, carrots, and grapes or strawberries or apples. Kale actually has way more health benefits.
@jca, I just refrigerate. I don’t freeze my strawberries. But good to know.
