So. You are preparing something to eat. Dishes accumulate. Do you clean up as you go, stack the collaterals, or just call Jeeves* to do his** thing?
Oh, oops!

We have staff for that, none go by the name of Jeeves though.
Major stacking! Let them soak for a couple of hours!
I usually clean as I got along. Saves extra work later.
I’m messy. I just stack them up and have a mega clean up after I’ve finished cooking. My husband is a ‘clean-as-you-go’ type of guy. My chaos drives him a bit nuts I think.
The one useful thing my mother in law does is wash the dishes 900 times a day, whether they need it or not.
So I have stopped caring much about how many dishes I use during meal prep.
It depends on what I am making and if there are already dishes in the sink, and also depends on how messy the prep is. If it’s something where I am not rushing and I have some time to kill, maybe while something is in the over, I’ll clean as I go. If I am in a hurry otherwise, it will wait. If it’s very messy, like saucy, it will wait and it will go into the dishwasher.
