Is it JACKoby or jaCOby? How do those with the name say it?
(Likewise Jacobi and other variant spellings.)
Or do some people named Jacoby say it one way and some another?

I have a two friends with this last name not related and spelled differently and they pronounce it JaCObee.
Because Jacoby Ellsbury used to play for the Red Sox, I know that his pronunciation is ja CO bee.
Derek Jacobi, the actor, put the stress on the first syllable.
Usually, in the States I’ve heard it as ja CO bee but as @flutherother says, Derek Jacobi is pronounced derek JAC o bee so it may be different in the US and Britain.
Depending on the country, it could Yacobi or Jacobi.
Like @Flutherother suggested, l would say JACobi because of the actor.
The only place I’ve heard it is from where @CWOTUS heard it—JaCOby Ellsbury.
The English probably pronounce it that way because of the Jacobite Rebellion.
JACK-o-bee seems surname
ja-COE-by first.
To me.
The Law Firm is ja-COE-bee and Meyers.
Well, it was Derek Jacobi who confused me about this. I try to remember how I hear people (everyone) say their own names and follow suit, but this one just doesn’t stick. Maybe I can remember that the actor is one way and the rest are the other way.
Thanks very much, all.
