Have a good tilapia/tomato/vegetable recipe to share?

Bought some really pretty tilapia and would like to do something other than my two stand-bys (butter/lemon and garlic/green onion/ginger).

I have a lot of tomatoes around and tomato sauce. Also some zucchini, mushrooms, onion ready to be used.

Suggestions? Please and thank you.

Baked Tilapia with Tomato and Basil?

Honestly, I think you have the fixins for a nice salsa.
I would peel, seed, and coarsely chop ½–1 cup each of tomato and zucchini. About the same of onion. Add one seeded, finely chopped jalapeno, the juice of one lime, a tablespoon or so of chopped cilantro and salt to taste.

Sprinkle the tilapia with Cajun seasoning to taste.
Heat your pan to medium-high, add a bit of coconut oil, and sear the fish. Almost a blackening, but if you need to reduce the heat and make sure the fish is cooked, that’s fine too.
To serve, I’d plate the fish, put a line of (somewhat drained) salsa down the side an add a dollop of sour cream. If you want a vegetable, corn (on the cob?) would be perfect. Salad and crusty bread, you’re ready to eat.

I saw something on Pinterest a few days ago. It was a Tomato Tart. This one by Ree The Pioneer Woman looks very tasty. She used cherry tomatoes, but I’m sure you could use any kind of tomatoes and just cut them into slices if you have regular sized ones.

For something nice and cool, how about a Tomato, Watermelon & Feta Salad? This is making me drool just thinking about it.

If you’re lucky enough to have one of those spiralizer slicers, you might enjoy this Zucchini Salad. If you don’t have one, you can simply use a regular Julienne Slicer

One of my favorite things is Pickled Onions. This recipe calls for red onions, but you can make it with regular white, brown, or yellow onions too.

I also like Marinated Mushrooms

And since it is hot, you might want to cook outside and make these Tilapia Skewers

That Tomato Granita is bizzare.

That Marinated Mushrooms recipe might be just the one I’ve been looking for. Marinated mushrooms were a favorite when I was a kid. Seriously.

Oh my.

Also the salsa suggestions give me a simple plan. Pan-fried tilapia fillets with pico de gallo would be easy.

I’ve got some reading / planning to do .

I ended up making a sort of Thai tempura with the fish and veggies.

Picking up more fish and another zucchini today – so will pick something from this list. Salsa with fish definitely feels good right now… as the heat revs up.

Olive oil, lemon juice and Cavender’s Greek Seasoning is a hard-to-beat marinade for seafood, poultry and pork.
Because of the salt content, I sometimes spike a lesser amount of Cavender’s with my favorite salt-free seasoning blend.
