What are some good examples of process engineering projects?

One example would be taking a process that is done with one or more machine operators and automating it so it can be done with fewer/now machine operators. Another would be the ground up design of an assembly machine for manufacturing. Other assignments might include modifying a machine to streamline a process, reduce scrap, or increase output.
