How do I cook spinach and bok choy?

I bought a bag of spinach and bok choy. It says that it “cooks in 3 minutes”. Should I boil them?

No. Boiling it will turn them to mush and remove a lot of the nutritional value. Spinach should be eaten raw in a salad or wilted. Wilted means steamed or heated until soft, not boiled to mush. Bok choi (and su choi) should be sauteed at high heat so that it retains some of its crispness (and all of its flavour).

@SmashTheState Can I cook them in my electric frying pan? With margarine ? I only have Caesar vegetable dip.

@RedDeerGuy1 Yes you can. But you want to make sure you get the heat high, which means something better than margarine. Peanut oil is best, because it has a high smoke point. If you try to sautee in margarine, you’ll either have temperatures too low (which means you’ll be frying the life and flavour out of it in order to cook it) or too high (which will cause the margarine to scorch and smoke).

Do you have a double boiler? If not, you can make one with a couple of pots. Steaming is second-best to sauteeing in terms of flavour.

@SmashTheState I don’t have peanut oil, and only one pot. I do have a microwave and microwave containers. Could I use vegetable dip raw? Can I boil in soy sauce?

Microwaves will steam vegetables quickly and easily. Chop up what you want steamed and put it in a bowl with enough water just to cover it. Cover the top of the bowl with plastic wrap or a plate to retain all the steam. Then microwave at the highest setting for 3–4 minutes. You want it wilted and not soggy, which means it should still have some texture to it. Don’t overdo it. It’s better to under- than over-cook. And use as little water as possible, since you want it to boil and steam quickly.

You can then melt some margarine in the microwave to pour over your wilted vegetables.

It is a tricky vegetable to cook so don’t be hard on yourself if it goes wrong. I never cook spinach after the third time of ruining it. I eat it as a salad leaf. It’s pretty nice raw.

You can sauté them in a pan with margarine. I like putting Bok Choy in fried rice. The spinach would be fine in it too. Saute the veggies a minute, then add day old rice to the pan, and some soy sauce. It’s a good use of leftovers. You can add meat, or egg, or some more veggies.
