Have you done anything interesting with leftovers lately?

I had some leftover sweet potato casserole from Boston Market which was too sweet but too good to throw away. I had a box of Trader Joe’s Banana Bread mix. I made the banana bread but instead of adding oil, as the box instructed, I added the leftover Boston Market sweet potato casserole to make a banana sweet potato bread. I added walnuts and vanilla to the mix.

I baked it but as it’s midnight now, I’m not going to eat it until morning.

Have you done anything interesting with leftovers lately?

I recently made some mild curry with lots of vegetables (eggplant, potatoes, carrots, celery, tomato, broccoli, bell pepper, and many others) and then made curry burritos, sloppy joe’s, and a curry lasagna. I like to fuse foods for leftovers, and see what happens. Though some of my fusion experiments have ended in total failure.
