Spring is almost here. Gardens will be bursting forth with fresh vegetables. Do you have any favorite salad dressing recipes?

I’m looking for some great dressings to perk up this year’s salads.

Olive oil vinaigrette. Marinate whole garlic cloves, fresh basil with light Olive oil in decanter, add in tsp sugar, ¼ tsp salt and cracked pepper with tblsp of lemon juice…let marry for at least 2 days. Toss bib and romaine lettuce with garden grown cucumbers, tomatoes and drizzle red wine balsamic vinegar and olive oil mixture….croutons, grated fresh parm cheese and go to town.

I like fresh squeezed lime, salt, pepper, and olive oil on an iceberg lettuce salad, with a few additional mixed greens, shredded carrots (I just use the peeler) cucumbers, and I add tomatoes and radishes for my husband.

Another dressing is mustard, lemon, shallots, oil. I don’t remember the measurements, but add very little mustard at a time. I use a special Dijon that has the seeds. I put it over romaine, cucumber, celery, and for my husband I add tomato and radishes. This salad doesn’t have a lot of lettuces, it’s more “dressed vegetables”.

You probably can see I like lemon and lime a lot.

I also eat some salads without dressing, I just use fruit to sweeten it. I add dried cranberries, mandarin oranges, and sometimes pineapple, on spring mix. Sometimes I add some walnuts.

I had a salad in Publix that was a spring mix and berry salad with quest fresco and a from scratch balsamic dressing that was good. I don’t know if those recipes are online? I’ll look.

Edit: I found it! I forgot it had a berry cobbler served with it. It was really good. Here’s the link. It’s strawberry season here in FL, I’ll have to try this recipe.

Not a recipe, but I tried the Greek Vinaigrette from Aldi this weekend and it was DELICIOUS. A surprisingly sweet note. There was a whole garlic clove in the bottle.

I like raspberry vinaigrette on spring mix with apple slices and walnuts, but I’ve never tried to make the dressing from scratch. I should look up a recipe. That’s a really good salad in the spring and fall at the “ends” of apple season.

Yes, I love all the red wine, blush wine and raspberry Vinaigrette dressings too, and you can’t beat the Rice Wine Vinegar over cucumbers, like the delicious and refreshing Sunomono salad.
I could live on this salad. Here’s a quickie recipe.

We will get scads of various varieties of cucumbers from the garden here and this is delicious with all, using lemon cucumbers really zing things up.
