What is your favorite vegetarian or vegan dish?

This question has probably been asked before, but I was inspired to ask it because of this Current Question and because we have a lot of new Jellies swimming in the lagoon.
You can pick dishes you like at restaurants, or recipes that you like.

All kinds of nuts.
Salads. All of them.
Potato pies.
Macaroni with sour cream.
Roasted mushrooms, with eggs.
Many others, but I can’t remember now.
Can vegans have cheese?? I’d say my grandmother’s broccoli and cheese dish. Scrumptious!
@kritiper Cheese is not considered vegan. Anything that is an animal product is not vegan. For the purposes of this Q, though, I am asking for both vegan and vegetarian dishes.

There is such a thing as “vegan cheese” but it is usually not the same taste as regular cheese. Some of it is pretty good (not great) and some of it is just awful.
I just had tacos. I used sprouted corn tortillas and Diya cheese and beans. I didn’t have any guacamole or good salsa though. If I had, that would have been my favorite. Is there a vegan sour cream? That would make it better too.
Filled peppers are very good too. You, um, fill the peppers with rice, potatoes, carrots, whatever you want, and then bake them in the oven. Delicious.
You can fill them with meat too, but they are great meatless too.
@Judi, there are several sour cream alternatives such as this one by Follow Your Heart. I have not tried any of them, simply because I am not vegan. I like most of the other Follow Your Heart products, especially their fake mayonnaise, so this is probably pretty good. I think Tofutti also makes one.
Stir fried tofu soaked in soy sauce with five spice, vegetables include water chestnut, snow peas and whatever else you want. Peanut oil that you use should be flavored with chopped ginger and hot pepper flakes while heating oil. Serve over steamed long grain rice.
I honestly just love a well made veggie burger. I also love portabello mushroom “burgers” too though.
@Kardamom Yeah, that’s what I thought. But @Sneki95 mentioned macaroni and sour cream so I wondered…
Fried potatoes with ketchup!
^ Oooh yes! I adore fried potatoes.
Which reminded me of a dish, where you bake potatoes in the oven, not peeled. We call it “potatoes in underwear” here. It’s super delicious.
There is a vegan restaurant in San Francisco called Gracias Madre that makes the most wonderful mushroom enchiladas with cashew cheese. Oh gawd, gotta get there again soon.
I like vegetable lasagne and I like biryani too. I usually have chicken with it, but you can eat it without meat.
My favorite vegan dishes are the Italian salad and the Mediterranean plate at Follow Your Heart:
Italian Salad
A mix of marinated artichoke hearts, garbanzo beans, red onion, black olives, tomatoes, mozzarella cheese and pepperoncinis; served on a bed of organically grown salad greens.
Even though I’m a wannabe pescatarian, I actually prefer the non-dairy cheese.
Mediterranean Plate
Fresh hummus, made of ground garbanzo beans, sesame tahini, olive oil, onion, garlic, lemon juice and cayenne pepper. served with tabbouleh, falafel, cucumber, onion, tomato, cabbage and warm pita bread.
Any Indian vegetable curry would be number one. After that, probably eggplant parmigiana and pasta prmivera.
Root vegetable latkes with apple sauce on the side.
Cold cherry soup.
Green beans cooked with whole pears.
A lot of my favourite dishes are vegetarian (and often vegan incidentally) are from the Baltic.
Eggplant, hummus, big ‘ol salads.
My favorite comfort food is sea-salted and mashed up avocado on a plain rice cake. Pure bliss.
Vegetarian, perhaps it could be vegan with a little tweak…
Eggplant Lasagna
I’m allergic to dairy, most grains, eggs, almonds, vinegar, yeast, sugar and mushrooms. I’m not a fan of seafood, and I’m allergic to some of it, It’s hard to find recipes.
I like strong flavors. Suggestions?
Roasted brussel sprouts, cole slaw, potatoes, potatoes, potatoes, prepared in all sorts of ways,
bean and veggie burritos but…must have cheese. French bread and spinach dip, salsa and chips, the list is endless.
Fruit cocktail with rice. Deep fried potato chips with salt.
It’ll have to be my spicy bean burger with tomato salsa in ciabatta bread.
Home baked ciabatta would be best, but it’s a long and difficult process. And I sometimes cheat with the salsa and just use ketchup.
If I’m feeling lazier, then pizza (it still takes 2–3 days for the dough to be ready.) I’m surprised no one has mentioned pizza.
If I’m feeling lazier still, then a mushroom risotto.
Bean and cheese burrito with lettuce, cheese, tomato, cheese, green onions, cheese, cream cheese, cheese and smothered in cheese.
Also macaroni noodles stewed tomatoes and tomato sauce. Cheese added later.
Vegetarian: my own curried lentils (not vegan because I use a stick of butter)
Vegan: an apple with peanut butter
Getting a veggie lovers pizza for me now!
