How do you sneak more vegetables into your diet?
I realize that some of you aren’t as fond of vegetables as I am. Those of you who have been able to sneak more veggies into your diet, maybe because your doctor told you you need to, or your spouse was worried about your health, or maybe you just figured out that eating more vegetables was a good idea for optimal health, how have you been able to accomplish this task?

I used to put diced zucchini In my pasta sauce. I don’t know why I stopped doing it.
For lunch I added some frozen corn to my clam chowder. It added a nice texture.
A really good blender is the key.
Omelets.
All kinds of veggies are great in an omelet!
Microwaving frozen mixed veg is very quick and easy if you’re not keen on cooking.
We eat quite a few veggies everyday. I used to make an Indian rice dish and I’d put in a good portion of mixed veg. By the time it was cooked nobody really noticed it was there.
As @RedDeerGuy1 suggested, grating zucchini or carrot into pasta sauce is a good one. Or adding some additional veg into a stew or soup.
When I’m earning enough money to afford them for myself. ( I’ve had to for go them quite a bit for a few months because I’ve had NO income for three months now.) Sometimes the frozen stuff is on special, but this time of year the fresh is expensive and I make sure kiddo gets good meals, even if I have to skip or just have rice.
I have Kato sneak them in. But it only counts when he is in full costume.
I hide the sugar snap beans from my family so I can eat them all myself… Sneakily.
Chopped onion and dill pickle in your tuna salad, big slabs of lettuce on sandwiches. (NOT pb&j’s)
Fruit Smoothies (with veggie filler).
Have a vegetables smoothie, snack on carrots or cucumbers between meals
Have vegetables soup
