What's your signature summer dish?

We are officially 2 days into summer in the northern hemisphere. What’s your best recipe? What can you make to wow the crowd?

I am famous for maple-smoked beer-can chicken on the charcoal grill – picture.

I follow the instructions from The Cook’s Illustrated Guide To Grilling And Barbecue and it is a sensation every time.

That looks awesome Jay. My signature baked beans would go with that perfectly!

@Dutchess_III My friends usually bring canned baked beans for the chicken dinner. They love baked beans. They’re good, but I bet yours are much better.

Shish-ka-bob or mud pie.
Once a year, usually in Summer, I will make a Mud Pie. Just fantastic!
Crush 50 Oreo cookies. Add one stick of melted butter, and evenly spread it into a 9×15 pan.
Freeze it.
2 hours later, evenly layer two quarts melted vanilla ice cream on top.
Freeze it.
3 hours later, mix 1 can of evaporated milk into 24 oz. of melted chocolate chips. Pour on top of the ice cream evenly.
Freeze it.
When everything is hard, slice and serve. Feeds about 12 people. Or me, 12 times.

Grilled corn on the cob with a chili, herb butter. I grill the corn, my wife makes the butter.

AAA beef rib roast with extra fat and marbling with no veggies. I eat the end piece first and the outside as it cooks. Also the $30 a bowl chilli extra hamburger and no red kidney beans with McNuggets dip.

I love to put lettuce on a plate, cut a tomato into six wedges and let them fall making a star on top of the lettuce, and pile chicken salad on top of the tomato. Sprinkle with paprika.

Watermelon, arugula, and feta salad. It sounds weird but when you combine all 3, magic happens. You get salty, sweet and bitter. It’s light and refreshing on a hot summer day—A perfect side dish to bring to a cookout.

Cold blueberry soup. It’s incredibly easy to make, but it’s delicious and just the right thing for a summer night.

I love to make summer squash casserole with crookneck squash, red bell peper, onion, breadcrumbs, cheddar cheese and eggs and a little cream.

I also make (and love) Ina Garten’s Tomato Feta Salad.

Big salads and cold soups. Used to love cold fried chicken but don’t eat that much anymore.
