If you had to pick a vegetable and eat it every day for a week, with different preparations, which one would you choose?

I don’t mean that all other foods, or veggies, are being taken away, more like those cooking shows that have a basket of items in which you have to make multiple dishes with the same ingredient.
For example, like in Rockfan’s earlier question about mushrooms and beets, I would choose the mushrooms and make soup, and omelettes, and quiche, etc.
If you had to pick a vegetable, which one would you choose, and what different dishes or preparations would you make for each of seven days?

What different dishes would you make with the broccoli? You have to make something different each day for a week.
I’d go with carrots. Grilled, they are sweet. Boiled, they are soft. Raw, they are delicious with that snap as you bite them.
And they are loaded with Vitamin A.

Avocadoes. You can make guacamole. Or eat them raw with salt and pepper.
Potatoes. Baked, fried, mashed, scalloped, home fries, boiled, oven baked with parmesan and rosemary
Zucchini. It is very versatile. Grilled, in soups, in salads…lots of choices.
Any of carrots, potatoes, onions, garlic, shallots, spinach or lettuce.
Mushrooms would be good for me too, though I don’t know they count as vegetables.
(Avocados, except they are fruit.)
Whatever the local hospitals have available.
An impossible veggie burger.

Spinach. I put some chopped spinach in just about everything I cook. I keep a bap of chopped spinach in the freezer so it’s easy to have a green vegetable with my meal even if I don’t see it.
@MollyMcGuire What is a bap? A container of some kind or an amount?
“bap” ~ a bap is also the name given to a classic Scottish bread roll
