Would Ricotta cheese be any good on a baked potato?

Also, what else can I use it for? I have a lot left over from my lasagna experiment.

Yees! I also make a killer lasagna with ricotta cheese and spinach!!!

Any cheese would be good in a stuffed mashed potato. A meal in and of itself.

olive oil
2 cups sliced fresh mushrooms
1 cup chopped onion
1 tablespoon minced garlic
3 cups fresh spinach
3 cups ricotta cheese
1 cup grated Romano cheese
1 teaspoon salt
1 teaspoon dried oregano
1 teaspoon dried basil leaves
½ teaspoon ground black pepper
1 egg
3 cups shredded mozzarella cheese
3 cups tomato pasta sauce (I make my own using diced canned organic tomatoes [2]. In a pan, mix 1 cup chopped fresh basil, oregano, pepper, powdered onion and garlic, and a dash of pink salt [amounts may vary depending on your taste] with a bit of olive oil, as soon as the mixture is fragrant, add the tomatoes. With a spatula, mix and crush the tomatoes a bit, bring to a boil and set aside. This will make more sauce than needed, but is also good for pasta or pizza.)
1 cup grated Parmesan cheese
Lasagna noodles (varies depending on the size of the pyrex, I use precooked noodles)

Preheat oven to 350 degrees F
In a skillet over medium heat, cook onions and garlic in olive oil until onions are tender Drain excess liquid and set aside.
In a different skillet, cook the mushrooms (I use sliced shiitake) in a bit of olive oil, add a bit of dried basil, oregano and fresh grounded pepper. Set aside.
Boil spinach for 5 minutes. Drain.
In a blender or food processor, mix the onions and garlic with the spinach, it has to be a bit chunky. Then, mix with the mushrooms.
Combine ricotta cheese, Romano cheese, spinach, salt, oregano, basil, pepper, and egg in a bowl.
Add spinach mixture. Beat by hand until evenly mixed.
Lay lasagna noodles in bottom (I grease the pyrex with a bit of butter).
Spread one third of the cheese/spinach mixture over noodles. Sprinkle 1 cup mozzarella cheese and ½ cup Parmesan cheese on top. Spread 1 cup pasta sauce over cheese.
Repeat layering.
Cover dish with aluminum foil and bake in a preheated oven for 1 hour. Cool before serving.

@Dutchess_III I love cottage cheese on a buttered baked potato. Seems like it’d be pretty good!

Sure! Actually sounds better to me than sour cream on a baked potato!

Or make manicotti if you have leftovers from your lasagna creation.

@flameboi all that on a baked potato?

@flameboi, your lasagne sounds great. But I’m confused about the spinach part. You have spinach going into a blender with onions and garlic, and then you’re combining spinach with cheeses and seasoning, and then you’re adding the spinach mixture to that.

Also, why boil the spinach?—especially if it’s going into the oven. It takes so very little to cook spinach that I usually add it to cooked dishes at the last minute, raw, and the heat of the dish is enough to cook it all it needs. (I usually use baby spinach and just chop it up some.) Does the spinach have to be cooked down in order to mix well?

I would try it. It’s great on certain pizzas too. White sauce pizzas.

@Jeruba You put in the blender the spinach with the onions and the garlic. Put it in a small bowl, add the mushrooms and mix it. Then, in a large bowl, combine the ricotta cheese, Romano cheese, the spinach mixture, salt, oregano, basil, pepper, and egg. Beat by hand until evenly mixed.

I’m sorry if I made it sound confusing :s

And yes, cooking the spinach helps with the mixing :) You can twist the recipe also!

Oh thank you! I will most certainly try it because mine turned out like shitcake (or whatever you said up there.)

Update…both that and the sour cream had gone bad so I just used cream cheese.

Even without anything on it it would be a complete meal for me @si3tech.

A poll can give me other’s opinions @CWOTUS. They can’t tell me that I will like it of course. For example @kritiper mentioned that if you like sour cream, you’ll like Ricotta.

Mix some sugar and cocoa into the cheese. Enjoy!

Absolutely! The ricotta cheese would be terrific with some chopped chives on a baked potato.

I love to put ricotta cheese in a warm tortilla and add some orange marmalade for a delicious breakfast wrap.

Ricotta cheese is also yummy spread on a piece of toasted sourdough bread, either alone, or with the addition of some strawberry jelly (or if you like it, I bet smoked salmon would be good).

You can also use ricotta cheese to make Lemon Ricotta Pancakes with Blueberry Sauce

Or maybe you’d like Strawberry Ricotta Muffins

Or how about Panna Cotta

And I love to put dollops of ricotta cheese on pizza, either with red sauce, or with green pesto sauce, and some mushrooms and broccoli.
