The weather is warming up, summer is coming. If you are planning to host, or attend, a summer picnic (big or small) what will you make? Or for those of you who don’t cook, what would you like to eat?
I’m thinking about deviled eggs, done several ways, blueberry pie, and cowboy caviar.
What about you?

I like this apple salad I recently started making. Thinly sliced tart apples (I use a mandolin) pieces of orange, tablespoon of apple cider vinegar, ¾ tablespoon orange juice, teaspoon of orange zest, a little jalapeño, a little cilantro (if you like cilantro). You can also add green onion and a tablespoon of oil. If you use red apples, like a Honey Crisp, it looks very pretty with green jalapeños and cilantro. The original recipe is more like a slaw, where you cut the apple with one of those spiral thingies. I don’t feel like buying another gadget.
I serve it with fried chicken, ham sandwiches, pork chop, or steak. I know you’re vegetarian, which I try to be at home, so I might have couscous salad with it, or veggie flatbread.
Is anyone getting hungry? I am : )
A dish I made for Mother’s Day:
Lemon asparagus and goat cheese with chickpea pasta.
It was a big hit.
