It’s nearing lunchtime and I’m craving the obvious: grilled cheese. My favorite recipe is the style found at a neighborhood greasy spoon diner (thick white bread with American cheese grilled with butter on a flat grill until super crispy). If at home, side dish is Campbell’s condensed tomato soup made with milk. If at diner, then French fries and room temperature ketchup.

A corn tortilla with monterey jack cheese melted under a broiler, with garlic powder and onion powder sprinkled on top. Accompanied by Cream of Asparagus soup.
Best rainy day lunch ever.
Never met a grilled cheese sandwich I didn’t like. I love the classic but also love it with tomatoes and/or bacon as well. English Cheddar or Cheshire on a thick piece of bread melted under a broiler is great too – “Cheese on toast.” That was my go to lunch for many years.
Rye bread with seeds; yellow cheddar on both pieces of bread, in-between thin sliced red onion and tomato slices. Grilled with mayo on inside and outside. No butter.
Cream of mushroom soup made with milk.
Now I wish I hadn’t just ate that fruit cup. I wanna grilled cheese!
For the sandwich, I want Monterrey jack cheese, with tomato and onion slices, between slices of Caraway seed rye bread.
Oinker that I am, I want TWO sides: Minestrone soup and a green salad with Romaine lettuce, onions, tomatoes, garbanzo beans, black olives, artichoke hearts, and avocado with Ranch dressing.
Grilled cheese tuna melt with white albacore tuna, Cheddar cheese and a chipotle aoli I mix into the tunafish.
Dark pumpernickel with cheddar and sliced tomato, grilled with butter on the outside. Progresso basil tomato soup on the side.
I make my grilled cheese the same way.
I like it with lobster bisque. They should have that at Costco after thanksgiving.
