If you can wait a few months, the new 2008s are about to come out and there will be more diesel offerings following a change in the U.S. regulations. There should be information on the upcoming models available on the web, so you can start researching now. I'll see what I can find...

Just as I suspected... the new VW Touareg V10 TDI is coming out and it's lovely, but costly, and doesn't seat 7. It's sister, the Audi Q7 DOES seat 7, but is not available in diesel.

It looks like only the Mercedes GL 320 CDI has both diesel and seating for 7.

Dodge Durango has seating for 8 and Flex-Fuel, with a Hybrid coming out in 2008 (not sure how well it will tow, though).

Well, I hope that gives you a place to get started. I went to http://www.edmunds.com/suv/index.html as a starting point because they list by fuel type, size, price and so on.
