Flat iron or certain cuts of chuck.
A finger steak is a scrap of sirloin, supposedly and traditionally, breaded and fried.
Did I say breaded? I’m not sure that was accurate. Battered is better.
Never even heard of finger steaks. I must say it’s an unappetizing name.
They are very good with ketchup or some other sauce. You eat them like French fries.
Here is a recipe for batter I found:
½ c. flour
1 Tbsp. baking powder
½ c. cornstarch
1 tsp. Accent
½ tsp. salt
1 egg, beaten
¼ tsp. onion powder
¾ to 1 c. water
Mix all ingredients and dip finger size steak. Deep fry till done.

Finger steaks were first contrived in Boise, ID, 1957, at THE TORCH café.
