I recently made a salad with spinach, arugula, and a balsamic vinaigrette (whisked with whole grain mustard, shallots, minced garlic, salt, and black pepper). Toasted walnuts and mandarin orange slices too. Really simple, but tasted so good!
Any other ideas?

I love Chicken caesar salad.
I just buy the kits ,but Mrs Squeeky makes the chicken for it.

Caesar salads aren’t particularly healthy, but they do taste really good.
I find it impossible to make a “healthy” salad!!! IF you add up the calories in the salads I make, I could eat a Big Mac complete with large fries & a milk shake & have fewer calories.
It’s really easy to make a healthy salad, here’s some great ingredients for one:
Arugula
Spinach
Romaine
Apples
Strawberries
Orange slices
Avocado
Tomatoes
Cucumbers
Onions
Radishes
Olive oil
Canola oil
Red wine vinegar
Balsamic vinegar
Apple cider vinegar
Almonds
Pecans
Walnuts
Pistachios
Garlic
Lemon juice
Lime juice
Honey
I know the ingredients for a healthy salad. I just don’t like to eat a lot of what is on that list; so, I just don’t make a healthy salad. When I start out, I promise myself that this time it’s going to be healthy Then the taste buds override my brain & when I’ve finished, it’s NOT a very healthy salad. Yes, I know it’s MY fault!!!
Now that we’re into the dregs of winter, I make salads from raw brussels sprouts. Slice in half, remove the core, separate the leaves, and wash in a colander. You can then toss the leaves with whatever dressings and added ingredients you enjoy.
This time of year, there’s a dearth of fresh produce. Raw brussels sprouts are delicious and seasonal. They’re also nutritional powerhouses.
