What is left over when you put wine or beer through a water filter?

Don’t know about wine but vodka…
You can take the most foul, rot gut, bottom shelf crap and run it through a carbon filter five or six times and it’ll taste just like top shelf.

In wine’s case, it is the dregs

From a wine web site:
Dregs are sediment sometimes found in a bottle, or glass, of wine. They’re made of yeast cells as well as leftover grape solids (stems, seeds, skin), tartrates (tartaric acid crystals), and any other solids leftover from the winemaking process. When the sediment’s in the wine barrel or vat, it’s called “lees.”

When you pass liquid through a filter you end up with a liquid in the glass and particulate matter in the filter.
