If you have gluten sensitivity, what happens if you unknowingly eat a little bit of gluten?

Also, I know that with allergies, it is possible to develop allergies later in life that you didn’t have as a child or youth.

Is this also the case with gluten sensitivity?

Normally, I get headaches and fatigue

Even a little bit of gluten can cause severe stomach cramping and bloating for those with celiac.

An old girlfriend, who had all kinds of allergies, developed a sensitivity to highly processed flour made from red wheat. She would develop a sharp headache within 10 minutes of eating bread in a restaurant.

Another friend had been infected by a parasite while travelling in South America. It took months for him to recover, and had to be a on a very strict diet for a long time. Every time he got well enough to eat normally and have a beer or a whiskey, he seeme dto have a recurrence of the parasite: cramping, irritable bowel, diarrhea. Finally a doctor told him “eat anything except for stuff with wheat: no pasta, no beer, no whiskey, only potato vodka.” He has been fine ever since, although even a slight bit of wheat gives him cramps.

Allergies can and often do develop later in life.

In the last few years, I developed a food sensitivity to some wheat products.

Strangely enough, I can have wheat beer. And had no issues eating wheat when I was in Germany.

Not entirely sure what that means.

When I accidentally have a small amount of gluten (like a dash of soy sauce in a marinade, or dusting of flour on a french fry), the symptoms are less severe.
