Why tell the waiter that you are vegan?

My cousin’s wife is a vegan.
Great, no problem, although I confess I don’t like her much, and I just know the feeling is mutual.
But in a restaurant, before she orders, she announces to the waiter that she is a vegan. As if the waiter really gives a shit.
Why not just order from the menu what she will eat, or if the menu doesn’t include her preferences, go someplace else.

Because you are supposed to tell the staff this type of thing, along with allergies to shellfish, etc. The wait staff will be able to tell you if there are dishes that you should avoid. The menu does not in any way give indications to allergies or specific diets.
Her preferences have nothing at all to do with allergies. They have to do with her book club.
Vegan is not an allergy. But the wait staff should be notified (“along with allergies”).
Just say this: “I hate my cousin’s wife”.

I wouldn’t rely on the waiter to screen my food choices. If I had certain preferences or allergies, I’d feel responsible enough that I would want to research what I ate and not trust that the waiter is going to alert me if there’s a conflict.

Because it often doesn’t say whether dishes truly are vegan. I ordered pasta once, listed as containing vegetables. It was sprinkled with bits of ham. When asked about it, the waiter said “We don’t declare all the spices!”

Kinda curious how you’d see this playing out? Would you sneak into the kitchen and watch them prepare it?

The Vegan Society observes that one thing all vegans have in common is a plant-based diet avoiding all animal foods such as meat (including fish, shellfish and insects), dairy, eggs and honey – as well as avoiding animal-derived materials, products tested on animals and places that use animals for entertainment.
She is alerting staff to her dietary preferences and not, as some may speculate, to encourage a game of hide the sausage or some other animal produce.
@jca2 The waiter is responsible for knowing the menu and alerting guests as to what they serve. It’s their job.
