How do torrent sites determine the numbers of seeders and leechers, and how often?

I understand the principles of torrent sites, that’s not the issue.

I go to a place liked PirateBay and I see two columns – one for seeders and one for leechers. The higher the number of seeders the more likely a download will complete.

How are those columns calculated? Does TPB (or any other site) canvas all the filenames it knows about every hour? Once a day?

Where do those statistics come from?
