Why are whole oven roasted potatoes healthy and deep fried ones bad?

Because the oven roasted ones just have a little bit of oil as a coating, and the deep fried ones are bathed in oil and absorb it in the cooking process. Oil is bad for you. A little bit is ok, maybe even beneficial. Large quantities, such as are in fried foods, are not good.
Any fried foods are bad for you. Excess fats in your diet have been linked to Diabetes and Heart disease.One article points out that a single potato has 93 calories, the same amount of French fries a whopping 319.
The operative word is “fried”. Deep fried.
Agree with everyone explaining how fried food is bad. However, I wouldn’t say that potatoes in general are that healthy. Oven baking them may be better, but potatoes are still super starchy and turn to sugar.
Fried potatoes (like french fries) are also supposed to form a toxic chemical that has been thought to cause cancer. I am not positive if it is due to the potato or just anything in oil that is fried. I think it has something to do with the oil going rancid at high temperatures (plus the peanut oil or canola oil used is just unhealthy in general)
