Salt, olive oil, lemon.
Greek seasoning.
Salt is also used in Indian cooking. Other major seasonings are cardamom, coriander, turmeric, ginger root and cumin.

My Latin American friends and family use salt and garlic in almost everything they cook. Lime is used a lot too.
