What are some good uses for onions, shallots & garlic?

I have been making this Thai Red Curry Chicken from a recipe I stumbled upon. When I find a new entree which I like, I make it two or three more times to make it part of my small repertoire.

One thing I like about the recipe is all the alliums. I like chopping onions, shallots and garlic. Their pungency and bite and the eye-watering make it seem healthy and I love the tastes.

Do you have any allium-centric recipes?

I use shallots in salad dressing, lemon, oil, dijon mustard, salt, pepper.

I use shallots or onions in a really delicious risotto, I use either one. I think you would really like it based on what you wrote above. The recipe is to bake the risotto, but I usually do it top of stove. Here is the recipe. I don’t use all the cheese.

Also, onions sauteed with a little garlic and salt and serve with steak, chicken, or pork.

You can roast or grill a whole onion, cut it twice and put some oil and salt. Serve with lemon and salt.

Pickled onions to go on top of meats. Here’s a recipe. Slice super thin.

Oh, and onions in an omelette. Onion and cheese.

Also, Scallion pancakes, are you including scallions? Egg foo young too.

I regularly quick pickle those things (as opposed to the canning type of pickling). I eat gobs of pickled vegetables.

You can also use fresh, raw, finely chopped onions and garlic to flavor sour cream, or plain yogurt to make dips for raw veggies, or to make salad dressings. Just put about a teaspoon of any of those things into the yogurt or sour cream, mix well, and let it sit in the fridge overnight.

I make tzatziki often in the summer. I always have yogurt and garlic on hand, so when I see a good deal on cucumbers I pounce.

Cucumbers
Yogurt
Garlic
Lemon juice
Dill

Also I have guacamole all the time. At a particular grocery store they are aggressive about putting imperfect avocados on the scratch & den shelf, at 99 cents for a bag of four or five. I keep thinking they will get wise but it’s still happening.
