Is it possible that PETA or the Vegetarian Society or some similar group is responsible for hacking the beef producer yesterday?
The beef and pork producer JBS (out of Greeley, Colorado) was hacked yesterday. So far, it’s being blamed on the Russians.
Could this be a militant action by some of the anti-meat organizations in the US? Could PETA (or related groups) have been behind this – either with or without Russian help?

Possible? You thought about it, they could think about it, too.
So, yes it’s possible.
But not very likely as they heretofore PETA have shown no signs of that kind of technical chops.
If it was PETA or a similar group, why would they ask for ransom? They would want the companies to feel the full brunt of the attack.
PETA? “the Russians”? Wow.
I don’t think so. While it might be possible, if caught, it would be akin to cutting off one’s nose to spite one’s face.
I think it’s a rare occurrence.
Maybe Russians who belong to PETA?

PETA is more about exposing cruelty and violence toward animals not stopping business for a day. ALF is the ONLY militant animal rights group and the haven’t been credited with anything for several years. The Vegetarian Society and almost any other vegan/vegetarian group functions to educate.
