What should I cook with my leftover wine?

I made braised ribs, and now I have about a cup of red wine leftover. I was thinking of making a coq au vin type of dish, but I thought I would see if the collective had anything creative that I have not considered.

Doesn’t have to be chicken. I don’t eat veal, but pretty much everything else.

Why don’t you just drink it?

I don’t drink wine.

I don’t know how sweet it is but you can try a little in your coffee.

You could use it in a spaghetti sauce or in stew dish. I saw a recipe for red wine and garlic mushrooms. I even saw a recipe for chocolate red wine cupcakes.

Coq au vin was my first thought. There’s also Hunter’s Chicken which is pretty similar. Nevemind, it calls for white wine.

@gorillapaws I like the idea of shallots and mushrooms. I could work off of that recipe.

@janbb I love that dish, I’ll keep it in my back pocket. I’ve never made it.

Chicken I have sitting in my freezer, so that might win out.

My mom used to make Beef Burgundy, which is beef chunks, fresh mushrooms, onions, ½ to ¾ c. of burgundy and seasonings (or ½ to whole pack of Lipton Onion Soup). When I make it I do it in the crock pot and serve it over either rice or noodles. Delish!
