At a vegetarian or a vegan restaurant, is it an expectation that the chef/cook is vegan/vegetarian himself or herself?

Can you be a great vegan or vegetarian chef but still like and eat food that isn’t what you prepare at the restaurant?

Is the expectation the food preparers at those restaurants “walk the walk”?

I am a vegetarian. My best friend is a vegan chef who is an omnivore in his everyday life.

When I go to a vegetarian or vegan restaurant, I personally don’t care what the chef eats at home. I know some people who care very much. It’s a personal thing.

I think an omnivore can be a great vegan chef. In fact, I think all restaurants should have some vegan side dishes, and even better if there is one or two main dishes.

I think a vegan chef would have a harder time cooking a full menu of meat dishes, but not impossible.

I do not beleive one must be vegan or vegetarian to prepare foods in a vegan or vegetarian restaurant.

There was a big contrversy in San Francisco a few years ago when it was revealed that the owners of a vegan restairant were meat eaters..

But the restaurant served reall tasty vega food, and teh controversy died down.

Maybe if the chef was a true carnivore, but I assume that, as an omnivore, the chef is well studied in the dishes they are preparing.

The difference is making vegan/vegetarian food vs eating it. Vegan/vegetarian is a subset of “food”. The chef can be good at making “food” but make only vegan/vegetarian at his restaurant. Does not sound like a stretch to me.

I’m not a vegan so I might be wrong. At my fave Chinese restaurant the chef is a Mexican. My fave Mexican restaurant, the chef is Italian. I don’t worry about it as long as the food is good
