Serious question, when you make pancakes do you use a mix, or is it from scratch?

Serious answer, this should be in the “General” category. Another serious answer, my mom uses a mix.
What mix does your mom use ??
She gets this organic kind Birch Benders and sometimes she uses King Arthur’s gluten-free.
From scratch. Although I tend to go for crepes rather than American style. There’s nothing special to the mix, the secret is in the cooking – you need the pan a lot hotter than you think you do.
I have my mother’s excellent recipe. Her secret was not to mix the batter too much but let it remain a little lumpy.
My husband did all the pancake making at our house, and he preferred to use Bisquick, which is sort of like doing it half from a mix and half from scratch.
As for me, I’ve never made pancakes. But I can tell you that they definitely call for real Vermont maple syrup, light amber preferred.
And butter.
Pearl Milling (Aunt Jemima) for mix and yes I do from scratch too. But haven’t done pancakes in four year, last time grand kids were here for overnight.
My husband uses Pearl Milling Complete. You just add water. I have a feeling they are not fabulous, but they are very easy and sufficient.
Don’t overmix, that is true for pancakes, biscuits, and pastry dough.
I see some people recommended Bisquick, and I like Bisquick for many things, so if you don’t eat a lot of pancakes you can also use it for other dishes. You can look up recipes, they are usually very easy to prepare. I used make some sort of ground beef pie that I liked.

I have made pancakes every which way. I’m quite fond of the idea of separating the eggs, then whipping the whites to stiff peaks before incorporating into the rest of the batter. There are a lot of recipes like this out there, out there but this is one.
My mother used to make a pancake which was with egg whites, and it was thin like a crepe, so @snowberry‘s answer was definitely for pancakes, @Dutchess_III.
My mom made pancakes from scratch and she taught miy daughter to make them from scratch. On the rare occasions we have pancakes, my daughter makes them from scratch.
If I were home and wanted pancakes, I’d be using the mix that is “complete” so you’d just add water.
I have a waffle maker but it’s put away, and I’m trying to remember what I did – I think I may have made the recipe from scratch.
I mean, it is just milk, flour, eggs and sugar. I do not even measure anything. No need for a mix.
^ I agree. Even the sugar is optional. I memorized this super simple “recipe” when I was 12:
glass of milk
one egg
four tablespoons of flour
pinch of salt
Makes about two German pancakes, or ten American ones. I like to add shredded cheese or apple slices. Sometimes sugar. Sometimes mashed banana. If the consistency is too liquid, I add some flour. If the pancakes fall apart, I add egg.
Pancakes are very forgiving.
Bisquik and I add a large pinch of sugar, and the first one is always bad.
I Cook them.on a cast iron skillet. To prime the skillet I use butter. So the first round of pancakes basically fry. Then I use those throw away pancakes to soak up the excess butter.
Then I give them to the dog.
Then I get down to business.
@jca2….it wasn’t just the egg whites but the fact that she beats them until they form stiff peaks. It gives waffles that firmer texture.

@snowberry That’s literally the same recipe that I use! Can vouch that they come out fluffy and delicious. (I think the milk and vinegar is what makes it.)
@Mimishu1995 I know, THAT is why I said what I said BECAUSE he said that this is a SERIOUS question. Shouldn’t a SERIOUS question be in GENERAL?
@RayaHope perhaps the OP just didn’t want silly answers such as you sometimes get when you ask a question in social, but was ok with the topic veering off course a bit (as it is now). It’s all good my friend!
I write “serious question” on Facebook all the time when I’m seriously interested in the answer, but I know it’s not a very serious topic. It’s kind of tongue in cheek.
@RayaHope: @snowberry sums up my point nicely. Maybe he wants jokes too, as long as it’s helpful and related to the topic. Anyway, that’s his question and his choice to put the question here. He can always ask the mods to move it to General at any time.
From scratch. My trick is to finely sift all the dry ingredients together into the mixing bowl. Then slowly add the wet ingredients with the mixer on low. Once combined, turn the mixer to high for 30-seconds to make the batter airy. Schmear a hot griddle/pan with real butter. Cook one pancake at a time.
Ingredients:
1 ½ cups all-purpose flour
3 ½ teaspoons baking powder
1 tablespoon white sugar
¼ teaspoon salt, or more to taste
1 ¼ cups milk
3 tablespoons butter, melted
1 egg
1 tsp vanilla

@cookieman I don’t have a mixer and rarely like mixing by hand, unless it’s a cake that I’m craving. note to self – get a mixer, it doesn’t have to be expensive!
My aunt used to make waffles and separate the egg, she’d whip the egg white remove that bowl and mixed the rest of the wet together in another bowl. Then she add the flour and the wet in together and finally fold in the egg whites. Those were super waffles.
@smudges: Pancake batter is looser than cake batter and it doesn’t have to be beaten a lot, so you can mix it up by hand for about thirty seconds and it’s fairly effortless.
@smudges You can also get an electric hand mixer for probably about $35—$50 that will do the trick if you only need one occasionally.
Walmart brand hand mixer might be about 10 or 15 dollars. You can also pick up a hand mixer on sale in supermarkets for less than 20 dollars.

Only one person said they use real Maple syrup on their pancakes,we switched to real 100% Maple syrup years ago and would never go back.
Nothing beats classic apple puree.
I make them from scratch using the recipe from The Joy of Cooking. We use REAL maple syrup and butter. On occasion, I will put a thin layer of raspberry preserves on mine.
On the rare occasions I make them at home, if I have peaches (fresh peaches), I will slice them up thin and drop them on the batter, when it’s in the pan, for a peach pancake. I do the same with blueberries, if I have them.
Now I’m craving pancakes! Might have to stop by IHOP!
… and I’m on a low carb diet !
