Are there any foods that might be considered gourmet or "fancy" that you've learned how to cook at home, and have discovered that they're really not all that difficult to prepare?

There is no magic in the kitchen. It is all about the ingredients and the technique. Everyone can do it.
The interesting thing is that you can make any meal “amazing”. I don’t use the word “fancy” when it comes to food and food prep. Perhaps “amazing” or “spectacular” have been used at my table.
If it looks good to the eye and tastes good on the palate, people will remember it.

Cornish hens on a bed of wild rice with your choice of vegetables. It looks elegant and is delicious.

Perhaps less fancy but more complicated, such as homemade hummis or tsatsiki sauce. I’m fairly certain I can make almost anything with the right equipment.

Cashew chicken here is quite different than other parts of the US and I’ve mastered that sauce as well. I would love have a sous chef friend.

Hot and sour soup. I thought it was complicated but aside from having the right veggies to cut up and use, I found out that what makes the “hot and sour” is just vinegar and pepper at the end!

I’d probably say poached eggs. You bring a pan of water to a gentle simmer and crack an egg into it gently. That’s it. Given how easy it is its amusing how many weird little gadgets there are to try and make it easier.

Fruit cocktail and rice with whipped cream.

Mushroom risotto? It feels a little fancy and tastes great, but my recipe is so simple, a five-year-old could follow it.

I can also make a chocolate mousse with cinnamon that gets chilled in long-stemmed glasses. This looks very fancy and is delicious – but, again, so simple and quick!

Chicken piccata, cocoanut curry chicken. I made Yorkshire pudding for the first time for Christmas dinner, everyone thought it was fancy and tasty, but it was pretty easy.

I subscribed to Blue Apron for about a year and a half, and learned lost of fancy dishes. I only dropped the subscription because it was expensive and the portions were skimpy.
