What is the most simple and quickest recipe in making delicious chicken salad out of left-over rotisserie chicken?

I would just cut the chicken up (after taking the skin off), mix in a little mayo and maybe celery if you like celery. Soome might like onions. I don’t like onions so I don’t put it in. Salt and pepper to taste. Put on bread with lettuce. I would toast the bread.
Some people shred the chicken. Some cut it up into little dices.
Some people like these things with more mayo. I like less mayo. It’s however you like it.
My wife likes to add mayo (of course), apple cider vinegar, salt, pepper and tarragon to hers. She plucks the meat by hand and she also likes to add halved red grapes (I’m less enthusiastic about those myself). I’ll often take a couple scoops of her chicken salad, remove the grapes, add a bit of extra mayo and then mince it with a chef’s knife to get a more “spreadable” version of her chicken salad. Finding a way to both enjoy the same chicken salad recipe is one of those things that marriage is all about…

I cut up the chicken breast, not too small not too large, and lately I like adding Hellmann’s mayo and dill. It’s so good and simple. I use dried dill that I have handy in my pantry, I’ve never tried it with fresh. You could add salt, but I find I don’t need to, the store bought chicken I buy is fairly salty.
I usually eat it on a sub roll or french baguette type of bread, and a little lettuce. If you like sliced tomato that’s probably a good addition too, I just don’t like tomato. Or, just the chicken salad on sandwich bread, you don’t have to add anything else.
Sometimes I eat it on a bed of lettuce, no bread.

Chicken Curry Salad is a good go to if you like that flavor
½ cup mayonnaise
1–2 tsp. curry powder
½ lime, juiced
pinch of salt, more to taste
2 cups cooked chicken, diced or shredded
½ medium apple with peel, diced
1 celery rib, finely diced
2 Tbsp. red onion, finely diced
¼ cup raisins
¼ cup dry-roasted cashews, roughly chopped
2–4 Tbsp. fresh cilantro
Served on lettuce or good bread
Just chip up the chicken, kosher pickles, celery and shred a bit of a carrot and mash hard boiled egg(s) with a fork. Add pepper, celery seed, and mix. We love chicken salad…..beware: when it looks like you need to add a little more mayo, DON’T. It’s probably just right.
