I do not know any double amputees, no.
Recent research has shown there is no Left Handed gene, but only a Right Handed gene. If the RHG is present, you’ll be right handed. If you don’t have it, it’s 50/50 which hand will be dominant.
Sometimes toddlers/little kids are, before they’ve established which hand they prefer. My great-nephew eats with his right hand but throws/catches a ball with his left.
My brother was ambidextrous.
I heard a story about an armless man. Very frustrated, sexually. He went nuts.

My grandmother was ambidextrous meaning that she could use either hand she chose at the time equally. Not sure that I can say she was neither handed; however, she was both handed!!!
