What recipes will you share that the dish is just as good or better the next day?

I’ve decided I want to try to have a no cook or clean day. I’m ok with loading and running the dishwasher, I just want to significantly reduce kitchen chores one day.

I’m going to focus on whole foods like raw fruits and veggies, and hot food I prepare the day before and can easily warm up in the microwave or oven.

Healthy food is a bonus, but I’m interested in whatever suggestions you have.

Already on my list:
Lasagna and stuffed shells
Asian pork roast
My grandma’s brisket

Vegetable ideas I don’t have anything creative. I usually sauté veggies, but they aren’t great a second day even though we do eat leftovers. We have a lot of salads too, I guess I’ll still be willing to slice or chop a veggie, but I rather not.

Chicken / kale or collards / sweet potato casserole
Lentil & sweet potato “salad” (not really a salad – you heat it up)
Lentil & onion soup
Chicken & sweet potato coconut milk curry

Macaroni & cheese (not from a box)
Beef stew
Vegetable quiche—easy, using Bisquick
and something we call “hot tabouli” just because it’s made with bulghur—I’ve forgotten its real name

I made a meatless bigos last night.

It’s one of the few things that tastes better over the next day or two.

Chili, stews and soups are awesome for this. If you buy a whole chicken, you can simmer the bones in water and a touch of salt for several hours to develop an amazing broth.

Chicken soup is really easy to make. I boil carrots, onions and celery and add chicken (I use thighs because they’re inexpensive and meaty). I take the thighs out midway, take the bones out, cut the meat up and throw it back in. Toward the end, I throw in rice or pasta or potatoes and boil some more. It can be a meal for all week. You can have that with salad and it’s filling and healthy.

Don’t you live alone @JLeslie? If so how can you have so many dirty dishes that you run the dish washer?

@Dutchess_III I usually have both my husband and I to cook for and we usually eat all meals at home. We eat out (or do take-out) only one to two meals a week.

@gorillapaws A couple of friends told me the same about using the chicken bones from a roasted chicken, I need to try it. I wouldn’t have though there was still flavor to be leeched out after it was already roasted. Unfortunately, my husband hates chili.

@kropotkin What is bigos?

@Tropical_Wille Funny, my husband requests my meatloaf, but we always eat it right as it comes out of the oven and leftovers the next day, but I could make solely to eat the next day.

@Jeruba and @gorillapaws I make a stew of sorts that would be perfect for this and hadn’t even thought of it, thank you for that suggestion.

@Jeruba The veggie quiche; is it a classic quiche pie and the Bisquick is used for the crust, or is it one of those Bisquick recipes that the vegetables are in the batter and it bakes almost like a cake?

@Zaku Can I do the lentil and sweet potato with regular white potatoes instead? Do you have a recipe for it?

I’ve not tried it with regular potatoes – it’d be pretty different, since the flavor and consistency would be quite different, but the recipe says you can substitute “just about any roasted vegetable” for the sweet potatoes. It suggests carrots, beets, or red bell peppers – the notion being to add some flavor to contrast with the lentils.

Since I’m Paleo, I’d bake or grill chicken breasts or steak. Maybe a cold gf italian pasta.
If you eat carbs just make extra soba noodles with your protein and a few veggies. Theyre my favorite leftovers of all time haha!
