What are the best onions to cook with?

Between white, yellow and red?
And what are the differences between them?

All of them are good for cooking with. Sweet yellow onions impart a lovely natural sweetness to sauces and dishes. White onions are great for the grill. They’re more austere and do well with grill marks. Red onions are great for pickling, also they work well in foods like tacos, salads, etc. I’ll throw them in with my fajitas.

Yellow onions are sweet. What do the other 2 taste like?

White onions are austere, almost “crispy”—though that’s a weird word to use to describe an onion. Red are more zesty.

Hmmm. I want to make onion soup. I have 2 yellow, which I’ve always used, but also have 2 red
Would it screw it up if I used both?

Not all yellows are sweet. Vidalia and a few others are, but most yellow are robust.

I think mixing onions brings a variety of mild flavor that the average person couldn’t even detect. I would definitely use both yellow and red together.

We are spoiled here in Georgia with an abundance of sweet Vidalia onions, grown in the southern part of the state. If you drive down there at harvest time, you can buy crates full for almost nothing.

My opinion – you can’t go wrong with vidalia onions for anything.

I don’t like my onion rings made with sweet onions and there are dishes I don’t want them in (like with or on a steak). But they’re great for almost anything and they are sooo popular!

To me, red onions have a distinct sharper flavor, and white onions also seem sharp but without much flavor except that oniony-ness.

So except for specific recipes that call for red onions, I am almost always choosing yellow onions, or yellow sweet onions, because I quite like their flavor, which can be a bit different in different recipes, depending on how you cook them, and what with.

And I agree with @smudges that yellow sweet onions aren’t a good match for everything.

And with @elbanditoroso that Vidalia onions (a sweet yellow variety) are usually really very good.

My favorite are Vidalia, and I look forward to the Vidalia season every summer. Otherwise, I mostly use sweet onions of another variety.

White and red can be good for raw onion or raw onion soaked in vinegar or lemon.

I prefer cooking with yellow but white ones are better raw, like for burgers. The red ones are, to me, simply pretty white onions and make salads more colorful. ;)

You can use white or red, but my preference would be yellow. Yummm
