How do I check how many texts I've used/have left on my iPhone?

Login to your AT&T account and click on the "Data" tab under the "Voice & Data Usage" heading.

You can also open up Safari and (on my iPhone at least) it’s the bottom most bookmark and it’s to your AT&T account. Somewhat redundant, but an alternative.
