Baking emergency! How to make a great cheesecake from scratch?
The recipe I’m using calls for a 12-inch springform pan, which I do not have and do not care to spend the money on. Is there another option that will prevent my cake from cracking? Please help!

What other kind of baking pan do you have? It’s going to be more important to watch the temp and possibly a water bath.
The cake will almost certainly crack, even in a springform pan.
And you’re going to have a really hard time with the presentation if you don’t use a springform pan.
The springform pan is designed to make it easy to remove the cheesecake from the pan. You can bake it in basically anything as long as you are willing to leave it in the pan. The most important thing you can do (besides a water bath) to prevent cracking, is to not over beat the mixture after adding the eggs. No matter what a recipe says, I always mix everything but the eggs, mix well, then add the eggs and just mix to blend. You may have noticed that a lot of recipes have a layer of topping of some sort. There is a reason for that, cheesecakes crack. Beg, borrow or steal a springform or you will hate yourself. Good luck!

Sad thing is I started to answer, “where is SoapChef when you need her,” then I couldn’t figure out how to spell Chef. Sad, I can’t spell or cook!
I don’t know if I want a naked hippie baking anything. It’s seems unsanitary.
