I don’t get it? How does it work? Do you just read some stuff when every you want and take a test when ever you want?

This question is virtually impossible to answer because the term “Online Class” is so broad.
Generally you have some kind of material you have to read (textbook, powerpoint, written stuff online, or even podcasts or videos of lectures.)
Then you have to take some form of a test (online, written, av, etc) that you have to submit. Sometimes courses are designed with fairly flexible due dates, sometimes they are pretty strict (ie test 1 must be completed between Nov 22 and Nov 24)
So unless you are asking about a specific school or a specific class, it’s really hard to answer your question with details.
Here is an example of an online course called “The Mandala of Being” that is completely different from the school and test-based variety. This is more for personal and spiritual growth.
“Each week you will receive one lesson and one reminder that includes an audio recording with Richard Moss, a written lesson, journal assignment, activity and meditation.”
He offers it for free, and then for those that like it, they can sign up for the more advanced online course for $25.
The online courses I have taken required participating in chat rooms with classmates and group projects.
