What are some quick meal ideas?

My husbands two brothers are staying with us for a bit, and man can they eat! I don’t eat red meat but cook with ground turkey a lot. Any idea…?

I fell like you could just have pizza every night…

Big pot of white chili. Cook up boneless chicken and use it in casseroles, frajitas. Don’t cook any differently than you normally would, just increase the portions. If they want red meat they can cook or take you guys out for hosting them.

Lay down the ground rules about food beforehand, and tell them where the grocery is, and where the space is that they can lay in a supply of snacks or whatever.

@alfredaprufrock The chili idea is great thanks! And they usually go to the store and buy steaks and grill if they want red meat b/c i refuse to handle it.

Any chance they enjoy cooking as well as eating? Maybe they can rustle you all up something to eat as well.

I usually make a stir fry of vegetables, and you can throw in any kind of meat you want.

Jarred pasta sauce, added to a skillet of browned ground turkey. Add garlic or onions or whatnot. Use to top noodles. Scales upward to feed the hungry!

@skfinkel every once in a while they will cook for me, but usually it’s something that i’ve already planned out.

Roast a chicken (not exactly quick, but it is easy!) Serve with Stove-Top stuffing and a salad.

A nice big casserole with wild rice and either cubed chicken or browned ground turkey. It is easy to reheat, easy to freeze and is filling- all you add is a salad and rolls, if you wish.

SUPER CASSEROLE (from Rosemary)

3 ½ cups cooked rice (see below)*
3 cups diced chicken, turkey, (any leftover meat)
1 can green beans, drained
½ cup grated onion
1 can cr of mushroom (or celery) soup
1 cup mayonnaise (lo fat is ok)
1 ½ cup shredded cheddar(6 oz.)

*In 2–3 qt saucepan bring 3 ½ cups water to low boil.
Add 1 tsp salt and 1 tsp butter. Pour in ½ cup wild rice and simmer 20 min.
Add ¾ c. white rice and simmer another 20 min. Remove from heat and
Leave covered- set at least 15 min. or until cool.

Add rest of ingredients, mixing well after each addition. Pour into greased Casserole dish. May refrigerate overnight and bake next day. Freezes well.
Bake at 350 for 40 min or til bubbly at edges. Sprinkle on topping if desired,
(shredded cheese, crushed buttered cracker crumbs, or a combination, etc.)
And bake 15 more min.

A friend recommended a product at Trader Joe’s that is cheap and generous: simmer sauces. Really simple and delicious, cook up with diced chicken and vegies, serve over lots of rice. I like the Masala Simmer Sauce the best.

Homemade macaroni and cheese! It’s delicious and filling…I haven’t met a single person who doesn’t like it.

Tuna Glop. Boil up a bunch of vegetables – I usually do carrots, mushrooms, onions and peas. Drain most but not all of the veggie water, add tuna and a can of mushroom soup (Campbell’s cream of). Boil pasta (I like rotelle for this), put tuna glop on top, and pass cheddar cheese. Or if you want to go gourmet, you can layer it in a casserole with the cheese on top and run it under the broiler. A timeless classic!

Lasagna

1 casserole dish
2 boxes of no boil Barilla noodles $4.00
2 jars of ragu (or whatever sauce you like) $4.00
1 pack of seasoned (spicy or sweet) ground turkey $4.50
1 lg.container of ricotta $3.75
2 sm. eggs $1.00
season w/garlic powder & Italian seasoning(s)
1 lg. shredded bag of mozzarella cheese $4.00
1 lg. bag of shredded Parmesan cheese $4.00
———-
$25.00 aprx.
6–8 healthy servings
(follow the steps on how to layer on the box of Barilla pasta noodles)
