I made insane amounts of mac&cheese for xmas dinner and now have more leftovers than I can handle. Can I freeze it to re-heat later?

You can freeze and reheat anything.
Break it up into smaller, lunch-size, Tupperware. Put a small piece of wax paper over it, snap on the lid – Then freeze it.
This way you can take them out as you need them and reheat them.
I would also top it off with some half & half before reheating it, and then stir that in once it’s hot.
@bythebay: Ooh, good idea with the half & half.
Yeah, maybe add some extra cheese, cream and bread crumbs when re-baking to give it a fresh kick. I have “rolled over” casseroles like this for super cheap dinner nights.
And once you reheat it, add a dab of your favorite hot sauce, just to give it a lil kick.
