What's the best vegetarian dish?

i’m entering a scolarship cooking contest and i want to make something vegetarian but i have no clue what. please help.

Taco soup. Seriously amazing. What are the rules of the contest? Does it need to be your own recipe or just something you’ve made?
Well, for a cooking contest you will want to apply your own innovation to a classic or create a new dish that marries innovative flavors or features new ingredients.
i doesn’t need to be my recipe, it just needs to be “a favorite”.
Actually, I take it back. For impressing judges, you should make mushroom lasagna.

Does it seem strange to anyone else that someone trying for a cooking scholarship doesn’t have their own favorite recipes?
@syz: You may note we haven’t given, you know, recipes. But ideas. Because I would totally ask this question too, but I’d be looking for ideas.
I was going to say eggplant parmesan, but several people beat me to it. I’d make some creamy mashed potatoes (possibly with garlic or rosemary) to go with it, and maybe some roasted brussels sprouts on the side. Mmm, mouth watering just thinking about it…
one of my favorite veggie dishes is pad thai. yummmmmmmmmmm.
