when going to sites like youtube where you can post and view videos, I noticed that only certain vids would play. Exactly which video format will iPhone play?

I don’t own an iPhone, but according to Apple, it supports .m4v, .mp4, and .mov file formats for video. Apple has not yet included Flash support in MobileSafari, which is why the iPhone has a dedicated app to play YouTube videos through its own H.264 decoder.

I’m disgusted that bumfights are part of your viewing habits and disturbed that you mention it so casually.
