What's the best ethnic food you've ever had?

My Jewish grandmother’s lean brisket, noodle kugel, potato latkes w. sour cream and apple sauce, chopped herring with sour cream and raw onions, carrot tsimmes, matzoh brie and rugalah.
I’m a big fan of Thai food. One of my comfort-food binges is likely to be shrimp pad thai (a savory noodle dish), tom kha (a chicken and coconut based soup), and a Thai iced tea (very sweet and creamy). Dessert would be the custard – it’s also coconut based. They’d have to roll me out of the restaurant!
Seeing @gailcalled‘s excellent choices, I’d also add my ex-boyfriend’s mom’s matzoh ball soup. Mmmm mmm, good eatin’!
@laureth; How could I have forgotten that. It was made with a real, free-range hen and the broth was golden and tasty. (The matzoh balls were made, perforce, with chicken fat.)
I once had some pretty amazing curry at an Indian restaurant called The Taj Mahal in Ulan Bator, though it could have been all of the Tiger Beer that made it seem so tasty.

I love trying new foods. Some dishes that i’ve tried recently: souvlaki, tandoori chicken, pad thai, broccoli rabe polenta lasagna, and kartoffelknoedel (potato dumplings).
I love ethnic food. I have favorites in Japanese, Korean, Thai and Greek. Still, hands down for me, it is Indian food.
I love the curries, the chutneys. Papadams, pakoras, samosas and naan. Yum! Lamb Saag. (Lamb curry with spinach) Mali kofta. (cheese balls in an incredibly velvety sauce) Matar paneer (cheese cubes with peas).
Does baklava count? I freaking love that stuff. It’s my favorite food group.
i can’t think of an ethnic food category that i don’t like.. but here are several ideas/suggestions:
Vietnamese (they use a lot of lemon grass, very refreshing)
Thai (all the dishes with coconut are delic!)
Mexican (americans are lucky that we boarder mexico! europe has horrible “mexican” food)
Indian (north and south, lots of flavor in every dish! and the mango custard YUM!)
Ethiopian (kind of like indian, similar spices)
those are all generally spicy, so if you don’t like spicy maybe look to eastern european/ middle eastern things like greek, bulgarian etc they use a lot of yogurt for that cooling effect on lots of meat and the occasional falafels.

I really really like Ethiopian food. Sadly, my husband doesn’t like it as much as I do. But, I have to put up with his sushi obsession.
@mcbealer: If you ever want a tough pastry challenge, try making the strudel dough.
It needs to be stretched to c. 30” by 40”.
