what are some good side dishes that go with latkes for a hannukah dinner?

other than applesauce and sourcream for the latkes…what are other side dishes I can serve?

Something green is very important or your plate will be all tan-colored. Quickly sautéed green beans or is good choice and I like including some kind of pesto sauce or other dip that is non-traditional to surprise your guests a bit. I also think that having a protein is a must or everyone will put on too many pounds. For this, I would suggest serving setae-chicken on skewers with a gado-gado sauce.
I love serving Gingered Beets with Latkes. Steam whole beets for about 45 minutes until soft. Then run under cold water and remove the skin (should slip right off). Cut into 1/4 inch pieces. Reserve 1/4 cup of beet liquid. In a small sauce pan make a rue: A Tablespoon each: butter, brown sugar, flour and secret ingredient: powered Ginger! Mix in the beet water and some lemon juice and salt to taste. Toss the beet pieces in the sauce—always a hit!
