What do I do with all these carrots?
I have 2 big bags of whole carrots that I got through a farm-share type co-op program. I made carrot muffins last night, but I’m looking for ideas for healthier, dinner-type dishes. I’d love yummy recipe ideas (maybe even main-dish ideas?) that use a lot of carrots.

One trick is to juice them. It takes 6 carrots or so to make an 8 oz glass of juice and it is very delicious and good for you.
Another thought is to purée them and freeze them, then you can add them to dishes as you please without them going bad.
You can grate them and add them to spaghetti sauce. Carrots lend the sauce a wonderful natural sweetness.
I love caramelized carrots as a side dish. There are a million different recipes out there for them, but this recipe looks great. One of my local restaurants specializing in healthy, organic vegetarian food serves amazing mashed carrots similar to this recipe, with their entrees. I highly suggest both!
I don’t know if this is included in Red’s recipes above, but when I was in Poland I saw that in some restaurants they mix carrots with (green) apples and use them as a side dish. Both sliced very very thin, then mixed. It tastes like salad, but smells like apple. And they usually serve the mix with meat. Interesting to say the least.

invite all of your friends over and have a carrot party
grate some carrots, throw in a handful or two of raisins, drain a can of crushed pineapple and stir in some mayo. I love carrot and raisin salad.
You can make carrot soup and carrot sweets and also you can add the carrots in any rice item.
Someone mentioned mashed carrots above, but you can also cook until soft, add curry powder and slightly salted cashews, chili to taste. Depends on whether you like curry or not really!
